If you’re looking for a quick, easy, and healthy Christmas morning recipe — one that fills your home with the warm smell of cinnamon and comfort, without pulling you away from what matters most — this one has become a favorite in our home.
Christmas mornings don’t need to be complicated to be meaningful. In fact, the older I get (and the more kids we gather around our tree), the more I’m drawn to simple traditions. The kind that feel calm. The kind that bring us together instead of pulling us in different directions.
This Crock Pot Sourdough Cinnamon Roll Casserole does exactly that.
It’s cozy.
It’s nourishing.
And it’s incredibly easy.

Ingredients

2 loaves sourdough bread, cubed

6 eggs
-
½ cup agave (plus more if you like it sweeter)

2 teaspoons cinnamon

¼ cup milk (we use almond milk)
Optional add-ins & toppings:

Chopped walnuts (or any nuts you love)

Vanilla Greek yogurt (for serving)

Extra agave for drizzling on top
A note for our gluten-free family (I’m right there with you)
Simply swap in your favorite gluten-free bread and enjoy this recipe the same way.
If you’re not celiac but have a gluten sensitivity (like me), it’s helpful to know that while sourdough isn’t gluten-free, its long fermentation process helps break down gluten, making it much easier to digest for many people with sensitivities. This natural fermentation reduces the load on the digestive system.

How to Make It

Cube the sourdough bread and place all of it directly into your crock pot.

In a bowl, whisk together:

6 eggs

½ cup agave
-
2 teaspoons cinnamon

¼ cup milk

Pour the mixture evenly over the bread in the crock pot.

If you love nuts in your cinnamon rolls (me too!), simply add chopped walnuts right into the mixture or sprinkle them on top.

Cook on low for 2½ hours.
That’s it. No fuss. No oven. No stress.
Our Christmas Eve Shortcut (Highly Recommended)
This is what makes this recipe truly magical for Christmas morning:

On Christmas Eve, we cube the bread and put it directly into the crock pot.

We mix the eggs, agave, milk, and cinnamon and store it in the fridge.

Christmas morning, I wake up before the kids, pour the mixture over the bread, turn the crock pot on low, and crawl back into the quiet of the morning.
The kids wake up to the smell of cinnamon and warmth drifting through the house — and we have a delicious, nourishing breakfast ready to enjoy after opening gifts.
Serving Ideas + the Health Reasons Behind It (because knowledge is power)

Top with a spoonful of vanilla Greek yogurt (this increases the protein – which lowers the glycemic load of your meal. We love Oikos Triple Zero, only sweetened with Stevia)

Sprinkle extra walnuts on top (healthy fats lower the glycemic load)

Drizzle with a little additional agave if you like it sweeter (agave is low in glucose and doesn’t have much impact on blood sugar, which is why we use it in this recipe as the sweetener)
This breakfast is simple, comforting, and feels like a hug in a bowl.
